Masala Gluten Free Bagle Bites

Ingredients

* 1 package of Udi's Gluten Free Plain Bagels, diced
* 1 small onion, diced
* 1 tsp. each of cumin, coriander seeds, salt, ginger, and paprika
* 1/2 tsp. cinnamon
* 1 pod of cardamom (ground)
* 1 Tbls. butter or olive oil
* 2 Tbls. diced tomatoes (optional)

Instructions

1. In a skillet or wok add butter or olive oil.
2. Add onion and spices and fry together until onions are glassy but before the spice (masala) mix starts browning.
3. Add the bagel bites and diced tomatoes (if using).
4. Roast together until bagel bites are well coated with the spice mix and a bit toasted
5. Serve while warm.
